Hi Dawn, we're a bit confused by your question. If you're saying that you prefer to make your scones with cake flour, that's totally fine, go with that! You'll find that you don't need to add all of the liquid because it won't absorb as much. Using cake flour vs. all-purpose wouldn't affect the flavor at all.
