I also make these into pretzel bites, and I have found that when cooking for a crowd, it is easy to par-bake pretzels and then freeze. You simply pull them out after they set, but before they are quite brown. I don't butter them then, but freeze and then they are easy to stick back in and finish cooking whenever! You would never know they were not freshly made that day.
