Wow, are you sure you haven't been reading my blog?? I know I read yours. :) Maybe it's a coincidence, but I just did my own pretzel research and posted in January, (http://doughcrafter.blogspot.com/2012/01/pretzel-test.html), and got different results. I made a deeper bath, and soaked the pretzels submerged, rather than spooning over. I also wrote which was which on my KAF parchment paper LOL! I found that the sodium carbonate pretzels came out better, and I will never boil another pretzel. :) Great minds think alike, Lynna, right?
