i use my fine microplane to zest or grate small volumes. the resulting "snow" virtually melts into any liquid. I have a few different microplanes in my own kitchen, each with their own purpose. I ADORE my fine zester for that exact reason: the resulting fine flakes virtually disappear in my sauces/cakes/glazes. Amazing! Kim@KAF
