Can this be done on an Induction cook top instead of the microwave?
Sure, it can. The cooking method will be somewhere in between the traditional and PJ's microwave method. Whisk everything together, but put it on a saucepan that works on your induction burner instead of in a microwave-safe bowl. Cook, whisking constantly, until the mixture thickens. Inductions are pretty quick, so you'll want to stay with it. As soon as the curd thickens, pour it out of the pan into another container so the heat from the pan doesn't continue to cook the mixture.
