I can't wait to try this with the Meyer lemons I have in the fridge. As far as the thickening goes, how about adding airflow ClearJel before it refrigerating? Sure, Elaine, give it a try - I'd mix it with some of the sugar first, otherwise it'll clump, and go ahead and cook it right along with the rest of the ingredients. Let us know how it comes out - PJH
