What's the refrigerated shelf life of this? Sounds delicious! Well, most homemade lemon curds have about a 3-week life in the fridge; I'd wager this one is similar. Still, it's so fast and easy to make, why not make it just before you want to use it, then eat it up before you have to start worrying about shelf life? Heck, you could even make a half recipe... PJH
