Hi Susan, did you happen to use the variety of instant yeast called Rapid Rise? We've found this particular brand name of instant yeast tends to give you one good rise, but loses rising power later in the process. This could also happen if you used very warm liquid to mix the dough. Check out our blog post on Desired Dough Temperature for tips on how to gain more control over the rising process.
