HI Carol,
Here's what I would do.  Bake, slice and freeze the cake layers, up to 4 weeks ahead for time. Take the thawed layers, the cream and cherries with you in a cooler, then assemble when you're ready to have desserts (yes, plural! it's Thanksgiving!).  Safe travels and happy holidays with your family!
