These are amazing! They are the prefect soft, chewy molasses/ginger cookie I have *also* been looking for, for years! I love that they call for fresh ginger. I did make a few modifications: 1) I used brown sugar instead of white 2) I used a whole white flour (basically a white flour with added fibre) and used a little less. They're just so fabulous!
