I've often made these into sourdough cinnamon buns, brushing the rolled out dough with 2 tsp of milk or with butter and topping with a cinnamon/sugar/flour mixture (1/4 c brown sugar, 1 1/2 tsp cinnamon, and 2 tsp AP flour). After baking and a bit of cooling time, frost with cream cheese icing. Love em!
