No worries, Catherine - sourdough can be confusing. Usually when you use sourdough for bread, you're using it not just for flavor, but for its rising power. In order for it to "wake up" and become active, you need to feed it with flour and water before using it. When sourdough is used mostly for flavor (e.g., there's additional yeast in the recipe, as there is in these rolls), then you can use it straight out of the fridge, without feeding it first.
