Hi Linda, you can actually substitute lukewarm water for the orange juice, if you'd prefer to leave it out. It is meant to temper the somewhat tannic flavor of regular whole wheat flour, but it is not required. I think it would be fine to reduce the honey a bit as well, although you may have to increase the liquid just a little to make up for the honey you leave out. 1 or 2 tablespoons of honey should work fine in this recipe. You could even leave it out completely, although we do love the honey/whole wheat combination.
