Thanks for the advice. Unfortunately, I only have so many cake pans. Would a sheet pan turned upside doodles do the trick? Sorry, Brien, didn't make myself clear. Set the cake pans on a baking sheet (right side up is fine). Not only does it insulate their bottoms, it makes it easier to move them around and get them in and out of the oven in one fell swoop... PJH
