Hi Becky, you could certainly double this recipe to make a two-layer cake, but I think the icing might be a bit tricky because it's meant to be poured on; while it won't melt into the cake, it might cause a bit more sliding in the middle than is desirable. Of course, we have an abundance of other chocolate frostings to choose from.
