What is this cheerleading for box cakes all about? I bake something called Demeter's Ricotta Cake, a recipe that came from a friend who is a classics instructor which is basically ricotta and eggs bound together with yellow cake batter. The original calls for a yellow cake mix. Cake mix? With its cardboard taste? You expect me to waste a pound of expensive ricotta and 8 eggs by using a cake mix! Perish the thought! I used a recipe from that icon of American cooking: The Joy of Cooking. The next time I make the cake, I will use this recipe. Cake mixes indeed!
