I recently heard on a food television program that baking recipes should never be doubled because the ratio somehow changes. If I want to bake a two-layer cake with this recipe, how would I change the ingredients? Also, would there be enough frosting for both layers? Thanks! There'll be probably JUST enough frosting for 2 layers, provided you don't need to spread it thickly over the sides, but rather drizzle it over top and bottom layers. And you can double all the ingredients except the baking powder and baking soda; those can remain the same. Good luck - PJH
