That is a great question Brenda, as it certainly is counter intuitive to not use bread flour in bread! You can use either in many recipes on our website, as our all-purpose flour is particularly high in protein compared to many others out there that don't work well for breads. If you use all-purpose flour you will find you may need a little less liquid and that you have a slightly more tender loaf, where as bread flour will adsorb a bit more liquid and result in a chewier loaf.
