Could the rest period be extended or would that hurt the dough? I would love to serve these with a dinner I am preparing this weekend but will be too busy with other cooking and cleaning tasks 3-4 hours before the dinner. I haven't tried it, Patty, but I expect the rising period could be extended to 6 or 7 hours, so long as you keep them relatively cool; don't leave them on the counter in your hot kitchen, for instance.
