We're glad you had some success with our recipe, Micah!

1)This recipe does not call for a pre-shape so a regualar baguette shaping protocol would suffice. However you are welcome to do a pre-shape if you find the dough is not completely relaxed and is retracting on you when you try to shape. If you do one, I would wait at least 20 minutes between pre-shape and shaping. 

2) It sounds like your oven is running a little hot on the bottom. To even out the heat, you can nest an additional sheet tray beneath the one the baguettes are resting on or move the rack up 1-2 positions on in your oven to get more direct heat from the top element and less from the bottom.
