Hi Micha! If you'd like to introduce cold, overnight fermentation to this recipe, we'd suggest experimenting with that during the first rise. You can mix up your dough and let it rest at room temperature for about 30 minutes or until it's puffy, then move the dough to the fridge to rise slowly overnight. The next day, you can pick back up with the remainder of the recipe. Happy experimenting! Morgan@KAF
