Back again. I accidentally banged my pan after second rise and 2 beautiful puffy loaves deflated significantly. Wasn't sure whether they would re-rise, so took the middle road -- waited about 20 minutes before putting in oven. They came back a bit, if I had waited longer would they have come back all the way?
I see that the recipe can be halved, but can it be doubled? Do you have to double everything? Four cups of starter might be more than I can get out of my mayonnaise jar.
I did the egg wash and Everything Bagel topping - they are beautiful.
