Marion, that depends on the size of your starter, its activity level, and how much starter you need for a given recipe. You'll want to take the amount of fed starter your recipe requires, add to that the amount of starter you want to keep on hand afterwards, and then feed your starter however many normal-sized feedings it takes to get to that amount without discarding. If your starter is bubbling to twice its volume within 6-8 hours after being fed and you have enough starter by weight, then you're ready to bake! Kat@KAF
