Charlotte, it really depends on the style you want! A good steam will definitely make the crust lighter and crispier, while doing it without will result in a thicker crust. If you really love the texture you get when you steam your loaves, go for it! It certainly won't hurt anything in this recipe. Happy baking! Kat@KAF
