I just used this recipe to make small whoopie pies. http://www.kingarthurflour.com/recipes/gingerbread-whoopie-pies-recipe I'm not familiar with how each ingredient works to make the texture of the whoopie pie. Would your recipe make a denser "cookie"? The recipe I used made a light "cookie". Whoopie Pies have a cake like texture. Frank @ KAF.
