Hi Deb! If you were to add sourdough, it would no longer be a big batch "quick" dinner roll recipe, unless you leave the yeast as-is and just add the sourdough for flavor, which is what we'd recommend. You can use our blog article Adding sourdough to a recipe as a guide. All you do is replace equal parts flour and liquid by weight with the same total amount of starter by weight. Happy baking!
