Hi Cas, you're correct! We never recommend letting bread (especially rolls) sit in the fridge longer than overnight or it will over-proof. It's slightly less risky if the dough is still in its bulk form, but if they're shaped it's pretty much doomed to over-proof from the start if it'll be longer than 12-15 hours until bake time.
