FYI: I think they need to rise before putting then in the oven and shouldn't be made more than a day ahead of time. I made two pans on sequential days. I took them out of the refrigerator at the same time. The two day old one collapsed more than the one made the day before they were baked. When they came out of the refrigerator, they were flat and I thought were too over-proofed to ever be anything than a hard disk. They both did rise some after sitting out, but the ones made 2 days prior were dense and not light whereas rolls made the day before turned into lovely rolls.
