That should work just fine, although the crust will be fairly delicate and some folks have difficulties rolling it out. My favorite pie crust recipe to make with Gluten-Free Measure for Measure Flour is our Rustic Milk Pie Dough recipe. It rolls out like a dream, and I've even been able to make a gluten-free lattice crust with it, which can be challenging with other recipes. And it should be delicious with the Summertime Peach Pie filling, too. Best of luck, and happy baking!
