I have used your flour for 45 years in Massachusetts. It is THE BEST. I make pies all the time and have good crusts. I now live in South Carolina and that requires some work to do but my biggest challenge was to make a gluten free crust. I bought a gluten free flour at the health food store. Not only could I not get the pie dough to hold together, I had to push it into place in the pan. Once baked, which was not satisfactory in appearance, it tasted as if I had used sand instead of flour!
Whatever made me think I could bake anything WITHOUT good King Arthur!
