Thanks so much for all the info. I'm wondering if I can replace the potato starch with any other flour as I can't have potato or corn starch in my diet. Thanks! Changing the blend will change both the texture and flavor profile. You can try any of your favorite g-f flours as a 1:1 replacement. Give it a try. Frank @ KAF.
