Yes, you can absolutely bake a full pumpkin rather than cutting first. Some of the reasons we cut are to ensure the squash cooks down well, and gives off a good amount of moisture, concentrating the flavors. It also allows the seeds to be culled and roasted separately, and maybe even shared. ;)
