Leah, pumpkins should store well for quite some time, and as long as it wasn't showing any signs of mold, the bitterness probably wasn't the result of age. It could have something to do with the variety of the pumpkin (some are sweeter than others) or the environment in which it was grown (environmental factors like drought can cause bitterness in plants). That being said, even canned pumpkin puree doesn't taste sweet right out of the can, so could it also be a matter of managing expectations? Mollie@KAF
