I followed these instructions and they worked well to create a nice puree. However, I'm curious if anyone can explain to me why it doesn't taste sweet at all - and I know that pumpkin is not sugary sweet, but I mean it doesn't taste as sweet as plain canned pumpkin puree. I would say it has a slightly bitter flavor. The pumpkin was several months old, so does that mean it was too old? It didn't appear spoiled or anything. It was a quite small pumpkin and I think it was labelled as a pie or baking pumpkin.
