I did my first fresh pumpkin cooking this year. Roasted them in the oven at 325 for about 45 min. when i looked i thought they were burnt ... but alas no... they were perfect. The skin came off so easy i was amazed and there was very little moisture so the step of straining for 30 -45 min i skipped. They were a beautiful orange and i am using them in my pies today.
