I have a couple sugar pumpkins so thank you for this posting! Question - could you use cheese cloth to drain the pumpkin puree to get some of the water out? You absolutely could use cheesecloth - or a fine sieve, or double layers of coffee filters. Good idea - thanks for sharing. PJH
