Hi Meg! We have a couple of blog articles that are just the ticket for you. One is on baking bread in a Dutch oven, and the other; baking bread in a cold Dutch oven. Both methods work. Preheating the Dutch oven gives a darker crust and slightly higher rise, but both methods work. We hope the articles help clear things up! Annabelle@KAF
