Patty, to achieve a softer crust on this loaf, pre-heat the oven to 375°F and place the dough in the Dutch oven with the lid on. Bake at this temperature for about 50 minutes and then remove the lid for the last 10. An instant read thermometer should read at least 205°F when it has finished baking. Also, try brushing the loaf with melted butter once it comes out of the oven to help maintain a pleasantly soft crust (plus it's delicious!). Happy baking! Kye@KAF
