Hi, Joey D- I'm really glad you like this oatmeal pain de mie recipe. My bread sometimes develops that "swayback" look, too; it's due to too much liquid in relation to the flour in your recipe. When the seasons change, the air becomes more or less humid. In summer, you need to add a bit less liquid to your bread recipe. In winter, a bit more. So your yeast bread recipe will always be somewhat of a work in progress, as you respond to different seasons and weather conditions. Baking is as much art as science; so long as you're flexible, your bread will be just fine.
