Okay, I'm reading your comments about the size of the pan which all might explain why when I tried making this yesterday - before I saw this blog - mine didn't rise to within 1" and didn't come out looking right. Still quite good and will be eaten. Guess I have the larger pan (must go measure). The dough was VERY sticky, but its been very humid and rainy here, might that have anything to do with it? Or was I just impatient? Yes, the humidity can affect the dough. Sometimes when it is humid, holding back a little on the water is a good idea. ~Amy
