Do any yeast bread recipes work with a pain de mie? I would love to get one, but wondering if my favorite recipe would work. Love your blog! I learn something new every time I read. No reason any kind of recipe wouldn't work in a pain de mie - it simply compresses the loaf as it bakes, to produce a close crumb. I just made our No-Knead Harvest Bread in my 13" pan... PJH
