I made these today, and they are delicious! Although I have been baking for years, I am new to GF baking, and have had some troubles adapting old favourites to my new dietary restrictions. These muffins really assuaged my cravings for a fall treat, and will become a go-to for lunch boxes and after school snacks. The only thing I changed was to add a tablespoon of vanilla extract to the liquids, as I find this helps to accentuate the pumpkin flavours, otherwise I made it as written.
