Just curious - why is there a ten minute rest time before they go in the oven? I forgot to do this and the muffins are in the oven. Thanks for any response! No big deal; it gives the gluten in the flour a chance to relax (making the muffins more tender), and gives the leavening a chance to get going. Your muffins will be fine, Elona - no worries! PJH
