Hi Jane, this bread does have a delightful texture, doesn't it? If you'd like to try experimenting with applesauce in place of pumpkin puree, you're welcome to give it a shot. You may consider holding back 1/3 cup of water since applesauce tends to contain slightly more moisture than pumpkin puree, depending on which kinds you use. Only add the second 1/3 cup of water if the batter seems dry. Additionally, you might want to consider making this recipe for Applesauce Oatmeal Bread.
