I didn't realize it but I had 2 different sized pans. I ended up using the entire recipe and it made 1 8x4 loaf, 1 7x3 loaf and 6 muffins. I followed the directions in checking for doneness and took the muffins out much sooner, then did the same with the other loaves. They were all delicious and even my "I don't like pumpkin" kid liked this bread. To me this is the best tasting, the easiest and the most versatile pumpkin bread recipe ever!
