I've never seen a store that didn't sell plain canned pumpkin (or squash, a good equivalent) - maybe you're just misinterpreting? If you find a 15-ounce can that says "pumpkin" on it, I'm sure that's what you want; "pumpkin pie filling" comes in a much larger can, since it has to fill an entire pie.
