After the over-nighter tightly wrapped up in the fridge, letting the bread warm to room temperature is perhaps a good thing - relative to better/nicer looking slices? Hey there Paul, I checked the blog and while PJ does call for wrapping the bread overnight, I didn't see anything about putting in the fridge, so I'd say you can just leave the bread out on the counter for the overnight rest. No warming needed. If I missed something, definitely let me know. ~ MJ
