I can find pumpkin in all the stores around me here in ATL. BUT, I have used sweet potatoes as a substitute for pumpkin. Like--last year, I bought a box of sweet potatoes from the GA Farmer's Market. That box was 40lb! I split it with a friend and we each got 22 huge sweet potatoes. The cost was well under $20!!!!! I'd bake 2 and eat them all week. You can freeze whole after baking-or cut in slices and warm them in the microwave for a great lunch or side dish. I used them for souffle, pie, quick bread, and yes--for muffins. I added plenty of spices and they were delicious.
