i had to resort to hiding a banana to make this but it was worth the effort. It came out awesome. I used regular KAF and added vital wheat gluten. Fabulous rise! As soon as it was cool enough (for me) I had a small slice spread with a touch of butter. Heaven on earth! Very fine grain, only slightly sweet - this could easily be my regular sandwich bread especially since it is so easy to make. Next time I will try it with some white whole wheat. Tee hee, it's banana hide and seek time! If you do need to freeze banana, try labeling it "chicken livers" or such so no one steals it on you! ;) ~ MaryJane
