Hey, I've been making a yeasted banana bread very similar to this for awhile now! I feel like my idea has been stolen :). I've been using all-purpose flour and haven't had any structural issues. It's great with nutella. Great minds think alike :). I do love it toasted with Nutella and more bananas on top. Happy baking! ~ MaryJane
